Looking for a dinner recipe that is completely different, packed with flavor, and guarantees juicy meat every single time? These Garlic & Herb Roasted Turkey Wings are the answer. Paired with simple white rice and a fresh side salad, this dish is perfect for weeknight dinners or Sunday family gatherings. Here is how to make it step-by-step.
Why This Recipe Works: The 2-Step Marinade
Turkey wings can sometimes dry out or hold a strong gamey flavor. To fix this, we use a two-day method:
- The Acid Bath: An overnight soak with lemon and garlic to tenderize the protein and eliminate gamey notes.
- The Flavor Rub: A rich dry-and-wet rub featuring Portuguese-style chicken seasoning from Costco, white wine, and plenty of fresh garlic to build deep flavor.
Ingredients List
- Turkey Wings: 4-6 large turkey wings (separated into flats and drums)
- Onions & Garlic: 1 large onion (sliced), 4 cloves (crushed), 5 cloves (minced)
- Aromatics: 1 whole lemon, 3 bay leaves, fresh parsley
- Spices: Garlic powder, Garlic & Herb seasoning, Salt, Portuguese-style chicken powder (Costco style), Crushed chili flakes, Sweet paprika
- Liquids: White wine, Olive oil
Step-by-Step Instructions
Step 1: The Overnight Tenderizing Bath
- Clean your turkey wings thoroughly and pat them dry with paper towels.
- Place the wings in a large bowl or zip-top bag.
- Squeeze the juice of 1 whole lemon over the wings and throw the squeezed halves into the bowl.
- Add the 4 crushed garlic cloves and cover with water.
- Refrigerate overnight (or for at least 8 hours) to let the acid break down and tenderize the meat.
Step 2: Seasoning and Marinating
- Drain the turkey wings and discard the lemon water and crushed garlic. Pat the wings completely dry.
- In a small bowl, mix your 5 minced garlic cloves, garlic powder, garlic & herb seasoning, salt, Portuguese-style chicken powder, crushed chili flakes, sweet paprika, and a splash of olive oil to create a paste.
- Rub the spice paste evenly all over the turkey wings, ensuring they are fully coated.
- Pour a splash of white wine over the wings, add the sliced onions and bay leaves, and toss together.
Step 3: Roasting to Perfection
- Preheat your oven to 190°C (375°F).
- Transfer the wings, onions, and juices into a large baking dish. Arrange them in a single layer.
- Cover the dish tightly with aluminum foil to trap the moisture.
- Bake covered for 1 hour.
- Remove the foil, baste the wings with the pan juices, and bake uncovered for another 20–30 minutes until the skin is golden brown and crispy.
- Garnish with fresh chopped parsley before serving.
Tip
You can leave the wings in the final spice marinade for up to 24 hours. The longer they sit, the deeper the flavor goes!
