Do you want a delicious, healthy dinner but absolutely hate doing the dishes? This one-pot fish dinner is about to become your new weeknight favorite.

The best part? There is no waiting around for water to boil or ovens to preheat. You can prep every single ingredient right into a pot, turn on the heat, and let the stove do the rest. It is ready in exactly 30 minutes, and you only have one single pot to wash at the end of the night!

I used cod for this recipe, but it works beautifully with any of your favorite firm white fish.

Why You Will Love This Recipe

  • One-pot cleanup: Less time at the sink, more time relaxing.
  • Ready in 30 minutes: Faster than ordering takeout.
  • Cold-start method: No preheating required; just layer and cook.
  • Healthy and packed with flavor: Fresh veggies, potatoes, and savory spices.
  • Ingredients You’ll Need
Olive oil: Be generous with the drizzle!
1 large onion: Sliced into rounds.
1 large tomato: Sliced into rounds (plus extra for the top layer).
4 medium potatoes: Cut into 2-centimeter slices.
2 cod fillets: Or any firm white fish.
    2 garlic cloves: Sliced.
Bell peppers: Green and red strips.
Liquids: 1/2 glass of white wine and 1.5 glasses of water.
Seasonings: 1 bay leaf, salt, chili flakes, and sweet paprika to taste.

How to Make It (Step-by-Step)

Step 1: Layer the Base

Grab a cold pot and start with a generous drizzle of olive oil. Next, layer your onion and tomato rounds flat across the bottom of the pot.

Step 2: Add the Potatoes and Fish

Toss in your 2-centimeter potato slices right on top of the tomatoes. Place your cod fillets and sliced garlic cloves directly over the potatoes. Top with Veggies and Liquids

Step 3: Cover and Cook

Finish the layers with your green and red bell pepper strips and a few more tomato slices. Pour in the half glass of white wine and one and a half glasses of water. Drop in the bay leaf and season everything to taste with salt, chili flakes, and sweet paprika.

Put the lid on, move the pot to the stove, and bring it to a boil. Once boiling, lower the heat slightly and let it cook until the potatoes are perfectly tender. Give the liquid a quick taste, adjust your seasoning if needed, and serve.

Recipe Variations and Tips

  • Swap the fish: Haddock, halibut, or sea bass work perfectly in this dish.
  • Skip the wine: If you prefer to cook without alcohol, simply replace the white wine with extra water or a light vegetable broth.
  • Cut the potatoes evenly: Keeping the potato slices right around 2 centimeters ensures they cook through at the exact same time the fish reaches perfection.
