🥕 Portuguese Carrot Donuts – Sonhos de Cenoura

These Portuguese Carrot Donuts (Sonhos de Cenoura) are light, fluffy, and bursting with citrusy flavor! 🥕🍊 Crispy on the outside, soft and moist inside — they melt in your mouth. Ingredients
1 kg (2.2 lbs) carrots, peeled
Peel of ½ orange
A pinch of salt
200 g (1 cup) sugar
3 whole eggs
250 g (2 cups) plain flour (all-purpose flour)
250 g (2 cups) corn flour (cornstarch)
Zest of ½ orange
Juice of ½ orange
1 teaspoon baking powder
Oil for frying (vegetable or sunflower oil)
Sugar and cinnamon mixture for coating

👩‍🍳 Instructions
Cook the carrots:
In a pot, boil the peeled carrots with a pinch of salt and the peel of half an orange until the carrots are very soft.

Remove the orange peel, then mash or grate the cooked carrots until smooth.

Add sugar and eggs to the mashed carrots and stir well.

Add the plain flour and corn flour, mixing until fully combined.

Stir in the orange zest, orange juice, and baking powder. Mix until you have a thick, smooth batter.

Heat oil in a deep pan. The oil shouldn’t be too hot — if it’s too hot, the outside will burn while the inside stays raw.
Drop spoonfuls of batter into the hot oil and fry until golden brown on all sides.

Remove and place on paper towels to absorb excess oil.
Roll each donut in a mixture of sugar and cinnamon while still warm.
