Easy Marinated Roast Chicken


Ingredients:

For the Marinade:
Chicken pieces, your preferred cuts
1 tsp salt
1/2 tsp black pepper
1 tsp smoked paprika
3 cloves garlic, minced
1 tsp onion powder
2 tbsp olive oil
2 tbsp white wine (optional for extra flavour)

For the Roasting Tray:
1 large onion, thinly sliced
Sliced green bell peppers
3 medium potatoes, diced
2 cups pumpkin, cut into cubes
2 medium carrots, peeled and sliced
2 tbsp olive oil (for drizzling)
1 tsp smoked paprika (for veggies)
Extra salt and pepper to taste

Instructions:
Marinate the Chicken:
In a bowl, combine the salt, black pepper, smoked paprika, minced garlic, onion powder, olive oil, and white wine. Mix well.
Coat the chicken thoroughly with the marinade. Cover and let it marinate in the fridge for at least 2 hours (overnight for deeper flavour).

Prepare the Veggies:
Preheat your oven to 400Β°F (200Β°C).
In a large roasting tray, lay down a bed of sliced onions, add the sliced green bell peppers on top of the onions.then arrange the potatoes, pumpkin, and carrots around the edges of the tray.
Drizzle the veggies with olive oil and sprinkle them with smoked paprika, salt, and pepper.

Roast:
Place the marinated chicken on top of the vegetables. You can add a little more olive oil on top of the chicken for extra crispiness.
Cover the tray loosely with aluminum foil.
Roast in the oven for 40-45 minutes. After 30 minutes, remove the foil to allow the chicken skin to crisp up. Continue roasting until the chicken is golden brown and cooked through (internal temperature should reach 165Β°F/75Β°C).
