Ingredients:

400g salted cod (desalted and flaked)
1 onion, finely chopped
2 cloves garlic, minced
Olive oil
200g potato sticks (store-bought fried)
4 eggs
Salt & black pepper
Fresh parsley, chopped
Black olives
Tomato salad (to serve)

Instructions:
Lightly boil the cod, then remove the skin and bones.
In a pan, sauté onion and garlic in olive oil until golden.
Add the flaked cod and cook for a few minutes.
Mix in the fried potato sticks.
Beat the eggs with salt and pepper, pour them in, and stir gently until creamy.
Serve immediately with chopped parsley and black olives on top.
