Got leftover rice and some bell peppers at home? π«π Then youβre going to LOVE this recipe! These stuffed bell peppers are filled with a delicious mix of rice, chorizo, and eggs, topped with melty cheese, and finished in the air fryer for the perfect texture.
Itβs quick, simple, and packed with flavor β a fantastic way to transform basic ingredients into a dish that looks and tastes amazing. Whether you use yellow, red, or green peppers, this recipe will impress your family and friends.

Ingredients:
2β3 bell peppers (any color, I used yellow)
1 cup cooked rice
100g Spanish chorizo (cut into small pieces) β or use any meat you prefer
2 eggs (beaten)
Olive oil (a drizzle)
Grated cheese (for topping)
Salt & pepper to taste
Instructions:
- Wash the bell peppers. Cut off the tops and remove the seeds.
- Drizzle olive oil inside the peppers and on their tops. Place them in the air fryer for a few minutes to soften.
- In a pan, cook the diced chorizo with a little olive oil until golden.
- Add the beaten eggs, stir, and cook lightly.
- Mix in the cooked rice and combine well. Season to taste.
- Remove the peppers from the air fryer and stuff them with the mixture.
- Sprinkle grated cheese on top, place the pepper βlidsβ back on, and return to the air fryer until the cheese melts and turns golden.
- Serve warm and enjoy! π
