Ingredients:

2–3 bell peppers (any color, I used yellow)
1 cup cooked rice
100g Spanish chorizo (cut into small pieces) – or use any meat you prefer
2 eggs (beaten)
Olive oil (a drizzle)
Grated cheese (for topping)
Salt & pepper to taste

Instructions:

  • Wash the bell peppers. Cut off the tops and remove the seeds.
  • Drizzle olive oil inside the peppers and on their tops. Place them in the air fryer for a few minutes to soften.
  • In a pan, cook the diced chorizo with a little olive oil until golden.
  • Add the beaten eggs, stir, and cook lightly.
  • Mix in the cooked rice and combine well. Season to taste.
  • Remove the peppers from the air fryer and stuff them with the mixture.
  • Sprinkle grated cheese on top, place the pepper β€œlids” back on, and return to the air fryer until the cheese melts and turns golden.
  • Serve warm and enjoy! πŸ˜‹
