Tender chicken full of flavour – This recipe brings hype to every family table!
🍗 Portuguese Chicken Rice
Ingredients
Olive oilu
1 onion, finely chopped
2 garlic cloves, minced
1 ripe tomatoes, chopped
1 bay leaf
Chicken pieces
1 glass of white wine
Salt, to taste
A pinch of peri-peri (or chili flakes)
Boiling water (enough to cover the chicken and later cook the rice)
2 cups basmati rice
Fresh parsley, chopped (for garnish)
Preparation
- Start the base
Heat olive oil in a large pan
Add the chopped onion and sauté until golden.
- Build the flavour
Add the minced garlic, chopped tomato, and bay leaf.
Let everything sauté slowly until well combined.
- Cook the chicken
Add the chicken pieces and let them cook in the sauce for a few minutes.
Pour in the white wine and let it simmer until the alcohol evaporates.
- Season & Simmer
Add salt and a touch of peri-peri (to taste).
Pour in enough boiling water to cover the chicken.
Let it cook for about 20 minutes.
- Add the rice
Stir in the rice and let it cook for 10–12 minutes.
If the liquid reduces too much, add a little more boiling water as needed.
Taste the broth and adjust the seasoning (salt, pepper, peri-peri) if necessary.
- Finish & serve
Just before serving, sprinkle with freshly chopped parsley.
Serve hot — a true Portuguese comfort dish!
