Portuguese Chorizo Bread (Pão com Chouriço)
Perfect for a cozy snack or party platter – layers of smoky Spanish chorizo wrapped in fluffy homemade bread.

Ingredients:
Bread flour 500 g 4 cups
Warm water (40 °C / 105 °F) 250 ml 1 cup
Instant dry yeast 7 g 2 ¼ tsp (1 packet)
Fine salt 6 g 1 tsp
Spanish chorizo, thinly sliced 150–200 g 5–7 oz
In a large bowl whisk flour, salt, and yeast.
Pour in warm water; stir with a wooden spoon.
Shape into a ball, in the bowl, cover with a tea towel, and let rise 1 hour (dough should double).
Punch down the dough and cut into three equal pieces.
Roll each piece into an oval about ½ cm (¼ in) thick.
Lay the first dough oval on parchment. Cover with a layer of chorizo.
Add the second oval on top, another layer of chorizo, then the third oval.
Pinch edges all the way around to seal, tucking them under so the loaf looks neat.
Invert a mixing bowl over the loaf (creates a mini proof box). Rest 30 min.
Slash the top with 3–4 deep cuts for steam release.
Transfer (with parchment) to a heavy lidded Dutch oven or deep baking tray with foil lid.
Bake 15 min covered at 220 °C / 425 °F, then remove the lid and bake another 15-20 min until deep golden and the bottom sounds hollow.
Rest on a rack 10 min, slice warm, and watch the chorizo oils soak into the bread—irresistible!
