Ingredients:
Chicken tights boneless and skinless, sliced into strips
1 packet of Old El Paso Chicken Fry seasoning
1 onion, sliced
1 capsicum (bell pepper), sliced
1/2 cup of shredded cheese (cheddar or any preferred cheese)
2 tbsp olive oil
Salt and pepper to taste
Optional: A pinch of chili flakes for extra heat
Fresh parsley (optional for garnish)
Instructions:
1. Marinate the Chicken:
In a bowl, combine the sliced chicken thighs with the Old El Paso Chicken Fry seasoning. Add a little olive oil to coat the chicken evenly. Let it marinate for about 10-15 minutes.
2. Cook the Chicken:
Heat a large skillet or wok over medium-high heat. Add the marinated chicken strips and stir-fry until golden brown and cooked through .
Add the sliced onions and capsicum. Stir-fry for 3-4 minutes until they are slightly softened but still crispy, add smoked paprika and bit salt and pepper.
Let everything cook together for another 2 minutes, allowing the flavors to meld.
Sprinkle the shredded cheese over the chicken and vegetable mixture. Stir until the cheese melts and coats everything.
Garnish with fresh parsley (if desired) and serve hot. This stir fry goes great with rice and chips.
